Vangi Bath Recipe

Vangi bath is Karnataka cuisine based recipe and one of the famous recipe in south India, which can be prepared within 20 to 30 mins. It is an easy recipe especially for bachelors and office going women to have a tasty lunch to fill your stomach.such a delicious food for brinjal lovers.

Vangi bath(brinjal rice) can be prepared by using vangi bath powder or with home made powder.In this post we will see how to make vangi bath recipe and powder at home.

Ingredients
  

  • Cooked Rice (quantity accd. to persons to be served)
  • 1/4 kg Brinjal
  • 4 tbsp oil
  • 1 onion (chopped)
  • 1 Green chili (sliced)
  • Turmeric powder as required
  • 1/2 cup Green peas or cashews or peanuts optional
  • Lemon juice (optional add flavor)
  • Tamarind juice as required
  • 2 tbsp Dry coconut (optional)
  • coriander leaves (chopped) to garnish

For seasoning:

  • Mustard seeds
  • Curry leaves
  • Cumin
  • Channa dal
  • Urad dal
  • I bay leaf

Making Vangi bath powder:

  • 5 nos Red chili
  • 2 tbsp Coriander seeds
  • 1 tbsp Channa dal
  • 2 tbsp Urad dal
  • 1 tbsp Cumin seeds
  • 2 nos Cloves
  • 2 nos Cinnamon

Instructions
 

Preparation:

  • Soak rice for 30 mins, wash and cook it as a regular way of yours. 
  • Roast the ingredients mentioned under “for making vangi bath powder” one by one. after it cools grind it as a powder
  • Cut the brinjals and soak them in salt water to prevent it from turning brown until you cook.
  • Soak tamarind in hot water for 20mins so that you get juice quick and easily.
  • Heat the cooking pan, add oil. After oil heats add mustard seeds, cumin, channa dal, urad dal, curry leaves one by one. Then add chili sliced and chopped onions. Fry them till onions are golden brown.
  • Now add brinjals and turmeric powder mix it well. After brinjals are cooked ¾ add vangi bath powder.
  • Add tamarind juice and cook it covered. Stir until rawness of tamarind goes off.
  • Roast cashews or peanuts in ghee separately and add them at last. Add dry coconut if you like.
  • At last add cooked rice, mix everything well.

Notes

If you are using green peas, cook them and add it along with brinjals.
Also if you want to cook rapdily you can use external vangi bath powder from store.
