Soak rice for 30 mins, wash and cook it as a regular way of yours.
Roast the ingredients mentioned under “for making vangi bath powder” one by one. after it cools grind it as a powder
Cut the brinjals and soak them in salt water to prevent it from turning brown until you cook.
Soak tamarind in hot water for 20mins so that you get juice quick and easily.
Heat the cooking pan, add oil. After oil heats add mustard seeds, cumin, channa dal, urad dal, curry leaves one by one. Then add chili sliced and chopped onions. Fry them till onions are golden brown.
Now add brinjals and turmeric powder mix it well. After brinjals are cooked ¾ add vangi bath powder.
Add tamarind juice and cook it covered. Stir until rawness of tamarind goes off.
Roast cashews or peanuts in ghee separately and add them at last. Add dry coconut if you like.
At last add cooked rice, mix everything well.
