Heat the milk in a saucepan, add the semolina, allow to thicken stirring (so that it does not attach) about 5-10 minutes. Add sugar, vanilla sugar, lemon zest and raisins.
Cook until you get a thick paste, pour into a mold.
Cool for at least 3 hours.
Serve with a red fruit coulis or strawberry syrup.
