Rinse the rice once and then put it in the rice field (rice cooker), add the coconut milk and a little water, salt. Let the rice field do the work for you.
In a wok , fry the chopped onion , add the red curry paste and stir until it begins to dissolve.
Throw the coconut milk rice into the wok and mix well so that it takes a nice color thanks to the red curry paste.
Leave to cook while stirring for ten minutes then 1 min before extinguishing the fire add the chopped coriander and the diced mango.
You can add slices of chicken and shrimp to make a complete dish and not vegetarian.
